Adaptable family chili recipe well-tested from years of family weeknight dinners. Spices, tomatoes, meat or meatless, this is a great base chili recipe to customize to your preferences.

Ingredients
  • 1 onion chopped
  • 3 cloves garlic chopped
  • 1 lb ground meat optional
  • 1-2 Tbsp chili powder
  • 1 tsp. cumin
  • 28 oz can of diced tomatoes
  • 1-2 14 oz can beans drained
  • 2 cups chopped veggies bell pepper, corn, carrots, mushrooms, etc
  • salt and pepper
  • smoked paprika
Recipe
  1. Add 1 tbsp olive oil to a 3-quart pot on medium heat and add onion. Cook until softened and browned slightly, stirring occasionally
  2. Add garlic and saute for 1 minute or until fragrant
  3. Add meat and heat until cooked through, stirring occasionally
  4. Add chili powder and cumin and stir until fragrant
  5. Add tomatoes with juice from can and bring to a simmer. Simmer for 20 minutes, stirring occasionally.
  6. Add a can or two of beans and other vegetables, stir to combine, and simmer for 20 more minutes
  7. Taste and season with salt, pepper, and smoked paprika to taste.
Recipe Notes

This chili recipe freezes well. Transfer to airtight containers or bags and freeze for several months.
