Sumac Quick Pickled Onions

Red onions seasoned with sumac and quick pickled in red wine vinegar. Makes a great topping for tacos, sandwiches, and salads. You will need a heat proof glass jar.

Ingredients
  • ½ red onion
  • ½ cup water
  • ½ cup red wine vinegar
  • 1 Tbsp sugar
  • 1 tsp kosher salt
  • 2 tsp sumac
  • 1 pint sized jar
Recipe
  1. Chop onions into thin long slices

  2. Pack onions slices into a heat proof pint sized jar

  3. Bring water, vinegar, sugar, and salt to a boil in a saucepan

  4. Mix sumac into the hot vinegar liquid and pour the liquid the over the onions

  5. Cool the onions to room temperature, and then store in the fridge for 12-24 hours to let the flavors meld. Onions will keep in the fridge for several months.
